A wine of depth, structure, and refinement, the De Marco Winery Piemonte Cabernet Sauvignon expresses the distinctive character of the variety with elegance and balance, rich in aroma and beautifully persistent.
Made from 100% Cabernet Sauvignon grown on marly and calcareous soils, the grapes are harvested entirely by hand during the last two weeks of September. Vinification begins with a fermentation of approximately two weeks at controlled temperatures between 24°C and 26°C, preserving the wine’s primary aromas. Maceration then continues for around one week, with daily pumping over and punching down to enhance colour, structure, and polyphenolic richness.
After drawing off, the pomace is gently pressed, and the wine is held at around 20°C to allow spontaneous malolactic fermentation, usually completed by November. It is then aged for approximately 18 months in French oak barriques, adding further complexity and refinement.
In the glass, it reveals an intense ruby red colour with purple highlights. The nose is fine and persistent, with clean aromas of ripe fruit and morello cherry, followed by notes of spice and red pepper. On the palate, it is full and expressive, echoing the bouquet, with a light tannic note typical of the grape variety and a finish that is long, balanced, and harmonious.
