
A Blanc de Noirs of striking purity and character, this Metodo Classico is defined by austerity, tension, and expressive precision. Made without dosage, it is left untouched in its most authentic and instinctive form, allowing the true identity of the wine to shine through.
Crafted from 100% Pinot Noir grown on marly and calcareous soils, the grapes are harvested entirely by hand during the first two weeks of September. Whole bunches are pressed gently using a traditional Coquard press, with careful fractioning of the pressing phases and low grape-to-must yields to preserve finesse and quality.
After the first fermentation at controlled temperature, the wine is left unfiltered and unclarified, then aged for 30 months on its own yeasts in bottle. The result is a wine of fine, persistent perlage, an intense straw-yellow colour with golden highlights, and a bouquet marked by notes of rusks and citrus.
On the palate, it is complex, vibrant, and beautifully fresh, with remarkable persistence.
